Do you like Mexican food? Mexican food is the second most popular cuisine in the United States with over 1.22 million searches on google per month. That is a lot of people trying to find the best Mexican recipes, or the best Mexican place to eat near by. Try this amazing Mexican Street Corn recipe with any of your favorite Mexican dishes you can make right at home. You can put it in salsa, a burrito, tacos or even by itself with a little rice is nice too! This is a very requested recipe and one of my personal favorites.
Ingredients Needed:
- 7 or 8 Medium ears of Sweet Corn (taken off the cob)
- You can also use canned corn or frozen
- 1 pack of ground Beyond plant based meat
- Olive Oil
- 1/4 of an onion (chopped very small)
- 3 cloves of minced garlic
- 1 jalapeño pepper (chopped small) Optional
- 1/2 teaspoon of Cayenne Pepper powder is another option if you like spice but don’t want the fresh pepper. Or you can leave it out all together
- 2-3 Tablespoons of your favorite plant based Mayo
- A handful of fresh cilantro (chopped)
- Salt to taste
- A little touch of cumin – depending on your preference Optional
Directions:
- With a torch or your oven burner (if it is gas) slightly char the corn before you remove it from the cob.
- NOTE: I have linked a tool you can use to remove the corn from the cob below.
- Place olive oil in a pan, just enough to make a quarter sized puddle. Heat the oil and then add in the onion and cook until it becomes slightly transparent. Then add Beyond plant based meat and cook together until the meat is cooked to your liking. I prefer it a little on the crispy side.
- Then add garlic and corn to the pan. Stir and cook until everything has been heated thoroughly
- Finally add the mayo, seasonings and fresh cilantro and stir to incorporate everything.
