Lasagna Soup

Italian foods are some of my favorites. Pizza, spaghetti, eggplant parmesan, lasagna, and those are just the salty ones. A few years ago, a friend of mine made me this dish and it was like putting two of the best dishes together. A warm soup with all of the amazing things from a lasagna. Over the years I have developed my recipe and just like she shared it with me, I want to share it with you. It is easy and great for the whole family.

Ingredients

  • 2 tablespoons of olive oil
  • 1 medium onion (chopped)
  • 3 cloves of garlic (minced)
  • 32 ounces of vegetable broth
  • 1 jar Marinara Sauce (I use Victoria)
  • 1 large can of tomato sauce
  • 2 cups of unsweetened, original soy milk
  • Water
  • 1 small yellow squash (chopped)
  • 1 small zucchini (chopped)
  • Salt to taste
  • 2 teaspoons of sugar
  • 1-2 tablespoons of Italian Seasoning
  • 1/2 box of lasagna noodles (cut in half)
  • Violife Mozzarella Cheese
  • Beyond Plant Based Ground Beef

Supplies Needed

  • Large Pot
  • Small Pot
  • Measuring Spoons
  • Stirring Spoon
  • Frying Pan
  • Spatula
  • Knife
  • Cutting Board

Instructions

  • In a large pot add olive oil, onion, chopped squash, and zucchini. Stir until the onions start to turn transparent. Once the veggies start to cook and the onions are starting to look clear, add the garlic and stir constantly for about a minute.
  • Add vegetable broth, marinara sauce, milk, and canned tomato sauce. Stir and add water until you have a little more than your desired amount of broth. Allow everything to boil for 10-15 minutes or until squash and zucchini are cooked.
  • While the soup is boiling, in a frying pan, place thawed Beyond and crush into a crumble. Stir occasionally until the crumble is cooked and starting to get a little crispy.
  • In a small pot, start boiling lasagna noodles that have been cut in half.
    Note: By boiling the pasta in a separate pot, you avoid watering down the broth and having overcooked and soggy pasta
  • Once all the veggies are cooked, serve in a bowl with the desired amount of lasagna noodles and top with some mozzarella cheese and crispy Beyond crumble.
